  • Garlic and onion – adds savory flavor.
  • Marinara sauce – the tomato sauce taste and classic flavors of lasagna comes from the sauce and seasonings.
  • Beef broth – Adds liquid to make the soup. You can substitute this with chicken broth. 
  • Ground sausage – provides protein and flavor.
  • Lasagna sheets – what pasta noodles make the lasagna soup, lasagna soup! Use regular lasagna noodles broke into small pieces. 
  • Ricotta and parmesan cheese – for the cheese topping.

How to Make Lasagna Soup:

  • Brown meat – even if you make this in the crock pot, the meat still needs to be cooked a head of time.
  • Add liquids – the liquid is what makes the soup, soup. Add seasonings here too to flavor.
  • Let cook – simmer the flavors together for an amazing savory taste.

How to Store:

Let soup cool down to room temperature. Then store in an air tight container in the fridge for up to one week and the freezer for up until 3 months.

How to Reheat:

Any soup with pasta in it is best reheated in separate parts. Remove the noodles and warm up rest of soup mixture. Add noodles back in once rest of soup is hot. This will help the pasta from absorbing the moisture of the soup as it cooks.

Ingredients
  

Soup Ingredients

  • 1/2 cup chopped onion
  • 2 cloves minced garlic
  • 1 lbs italian pork sausage
  • 24 oz marinara sauce
  • 4 cups beef broth
  • 3 tbsp italian herbs seasoning
  • 4 uncooked lasagna noodles broken in bite sized pieces

Cheese Topping

  • 1/2 cup ricotta cheese
  • 1/4 cup parmesan cheese
  • salt and pepper to taste

Instructions
 

Stove top

  • In a large pot, begin frying the sausage, breaking it into smaller pieces as it cooks. Once mostly browned, add onion and garlic. Cook until onion is clear.
  • Pour in marinara sauce, broth, and seasoning. Bring mixture to a boil. Once boiling, turn down mixture to a simmer. Simmer for 25 minutes. Then add lasagna noodles and cook for about 10 minutes or until noodles are soft.

Crock pot

  • In a large skillet, begin frying the sausage, breaking it up into smaller pieces as it cooks. Once mostly browned, add onion and garlic. Cook until onion is clear. Dump into a sprayed slow cooker. Pour in marinara sauce, broth, and seasoning. Cook on low for 4 hours. Within last half hour, add uncooked lasagna noodles.
  • During last 10 minutes, prepare ricotta mixture by combing the ricotta cheese, Parmesan cheese, salt, and pepper in a bowl.
  • To serve, ladle the hot soup into soup bowls. Top with a dollop of the ricotta mixture and mozzarella/parmesan cheese. Serve your delicious lasagna soup hot! Add crusty bread or a side salad for a balanced meal.
