15 Minute Spicy Ramen Recipe
Make this spicy ramen recipe in 15 minutes or less! I love spicy, and Ramen noodles is definitely something I only eat spicy. If you love spicy you are in the right place. The spice is customizable, so you can add more or less depending on your heat preference. The variations are endless! This hot and spicy ramen recipe also tastes good when feeling under-the-weather as well. Serves about 2-3 people.

Ingredients for this recipe
- Cooked long noodles – angel hair, plain boiled ramen, etc
- Low sodium chicken broth – a soup base that has flavor
- Chopped onion – adds taste and fragrance
- Crushed garlic – aromatic flavors
- Hot sauce and red pepper flakes – what makes spicy ramen
- Spices to taste: cilantro, parsley, dill weed, cayenne pepper, chili powder, onion powder
How to Make Spicy Ramen
- Make broth – boil all the ingredients together besides the precooked noodles. This will blend the flavors
- Add noodles – the hot broth will warm up the cooked noodles. Together they are the perfect comfort food!
Ingredient Brand Recommendations:
- Ramen – Maruchan, Asian markets might have more options of plain ramen you can boil and add your own broth without throwing out the Maruchan packet.
- Chicken broth – I made mine out of chicken bullion cubes and water
- Hot sauce – I used ghost pepper sauce
- Red pepper flakes – McCormick, unless I have sample packets from a pizza place I need to use
Variations of Spicy Ramen Noodles:
The flavors you can add to your homemade spicy ramen are endless! Here are a few ideas: fresh ginger, scallion, oyster sauce, fish sauce, siracha, soy sauce, carrots, spinach, tofu, egg, pork, chicken, basil, cilantro, tablespoon of sesame oil, etc., just to name a few ideas if you want to flavor your ramen differently. If you want super spicy ramen noodles, just kick up the heat a notch.
If needing this recipe to be gluten free, you can use gluten free noodles.
What if my ramen is too spicy?
Some people don’t find spicy ramen noodles a comfort food, but do not be scared of this homemade ramen either just because it is spicy! I did the spicy ramen challenge (click for video), and this heat does not even come close to that. If you can’t handle the heat in this recipe, how to make spicy ramen less spicy is fairly easy. You can always cut down on the amount of seasonings if you are that scared of spice.
Why you should make homemade ramen:
Ramen noodles in the package from the store have a lot of sodium! They may be a cheap college food, but the packages I have say almost 2,000 mg of sodium per serving! That is a lot of sodium considering around 400 mg is considered moderate level of sodium per serving. I find it healthier to try to make my own ramen! The flavor is also more customizable making homemade hot and spicy ramen. Adding hot sauce to ramen yourself allows you to make it whatever spice level you choose.
Recipe tips
- Don’t overcook the noodles – if you are using leftover noodles, adding them to the broth is to help warm them up. Don’t put them on high heat for too long, cook the majority of the time on medium heat
- How to make ramen broth richer – add more spices, or even add more chicken broth for more flavor
- How to make ramen extra-spicy – if you want to go beyond pepper flakes and hot sauce, you can boil jalapeno or adobo peppers in the broth to add more heat
How to store homemade spicy ramen noodles:
- Fridge – store these hot and spicy ramen noodles in an air tight container in the refrigerator for up to one week. To reheat, place leftovers in a microwave safe bowl and heat a 30 second intervals until heated throughout.
- Freezer – I have not tried freezing this recipe. If you would like to try it, go for it! Let me know how it goes.

- 1 1/2 cups of low sodium chicken broth
- 1/4 cups chopped onion
- 2 tbsp crushed garlic
- 2 tbsp hot sauce you can add more or less

- spices to add to ramen to taste: cilantro, parsley, dill weed, cayenne pepper, chili powder, onion powder
Instructions
- Boil everything ingredient together except the noodles for about 5 minutes.
- After 5 minutes, add in desired amount of noodles. Cook for about 5 minutes if using precooked noodles or until they are soft if using uncooked noodles. Serve your Homemade Spicy Ramen hot!
