Easy Chorizo Tacos Recipe in 15 Minutes or Less

Ingredients for Epic Chorizo Tacos
- Chorizo – use raw, ground Mexican-style chorizo for this recipe as it resembles taco meat with its spicy flavor. You can use any chorizo meat or even a plant-based chorizo option as you really cannot taste the difference! You can also make homemade chorizo.
- Eggs – provides protein and helps mellow out the spice of the chorizo.
- Cheese – gooey cheese to add flavor.
- Tortilla – to help hold our taco mixture, you can also put this on chips as well for chorizo nachos.
How to Cook Chorizo for Tacos
- Place chorizo in a large skillet over medium-high heat. Cook like you would cooking sausage. Remove chorizo mixture from skillet.
- Add eggs – crack eggs in same skillet and scramble. Add chorizo back to the skillet.
- Add cheese – melt cheese with other ingredients.
- Assemble – add about 1/2 cup of the mixture to a taco shell and top with your favorite toppings! For side dishes for Taco Tuesday you can also serve with street corn and churros.Â

I find chorizo in the meat and cheese refrigerator section of the grocery store. If you are looking for the soy kind, this may be located in the meat alternative section by the tofu in the lettuce area.
Raw, ground chorizo is best since taco meat is typically ground. The purpose of using chorizo is that the meat is already flavored!
Chorizo is usually fully cooked after 8 to 10 minutes over medium heat.
You will notice that once you start frying your chorizo, the meat will turn slightly darker red in color and there starts to be more oil separating from the meat. See pictures below for details. It will smell fully cooked when it is done or when it is burning.
Variations of How to Cook Chorizo for Tacos:
- Vegetarian – make this vegetarian by making tofu scramble instead of using eggs and use vegan chorizo.
- Add carbs – add hash browns, tater tots, cubed potatoes, etc to make tacos with potatoes.
- Nachos – instead of using a taco shell, spread mixture on corn chips!
- Corn tortilla – could make this into street tacos by adding a small corn tortilla.Â
Storage and Reheating Chorizo:
Store leftover chorizo tacos meat and eggs in an airtight container for about 3 days. To reheat, heat mixture in skillet with about 2 tbsp of water to provide moisture. I would not recommend freezing the tacos as eggs do not freeze well with the cheese.
