In a large pot, begin frying the sausage, breaking it into smaller pieces as it cooks. Once mostly browned, add onion and garlic. Cook until onion is clear.
Pour in marinara sauce, broth, and seasoning. Bring mixture to a boil. Once boiling, turn down mixture to a simmer. Simmer for 25 minutes. Then add lasagna noodles and cook for about 10 minutes or until noodles are soft.
Crock pot
In a large skillet, begin frying the sausage, breaking it up into smaller pieces as it cooks. Once mostly browned, add onion and garlic. Cook until onion is clear. Dump into a sprayed slow cooker. Pour in marinara sauce, broth, and seasoning. Cook on low for 4 hours. Within last half hour, add uncooked lasagna noodles.
During last 10 minutes, prepare ricotta mixture by combing the ricotta cheese, Parmesan cheese, salt, and pepper in a bowl.
To serve, ladle the hot soup into soup bowls. Top with a dollop of the ricotta mixture and mozzarella/parmesan cheese. Serve your delicious lasagna soup hot! Add crusty bread or a side salad for a balanced meal.
